Elizabeth “Beth” Windsor lived life loud, fast, and entirely on her own terms. She left this world far too soon on July 27, 2026, at just 36 years old, leaving behind a legacy as untamable as it was beautiful.

Born June 1, 1990, in Ventura, CA, to Adrian Del Hierro and Brenda Slamp, Beth moved to Spokane at the age of two, making the Inland Northwest her true home. In 2022, she moved with her family to Colville, where she continued building a life surrounded by the people she loved.

To know Beth was to know a true free spirit. A self-proclaimed wild child and adrenaline seeker, she ran toward adventure with open arms and never hesitated to live life to the fullest. She possessed a rare, magnetic energy that drew people in, turning complete strangers into lifelong friends wherever she went.

Beneath her wild exterior was an extraordinary woman. Beth was sharp-witted, fiercely capable, and often the smartest person in the room. She had a way of seeing things others missed and a strength that carried her through whatever life placed in her path.

More than anything, Beth’s heart belonged to her family. She was a deeply loving mother, daughter, and sister. Her love for the people in her life was absolute, fierce, unwavering, and undeniable.

Beth’s path was never traditional, but neither was she. She packed more living, love, laughter, adventure, and intensity into 36 years than most could manage in a lifetime. She embraced life fully, leaving behind memories that will remain with everyone fortunate enough to have known and loved her.

She is survived by her beloved children, Maria Jensen, 18; Joseph Jensen, 17; Charles Jensen, 16; Sawyer, 13; Gabriel Windsor, 4; and Samuel Coupe, 2; As well as her mother, Brenda Stauffer (Slamp); her siblings, Adrian Charles Del Hierro jr. and Caroline Dobkins; her husband, Ryan Dobkins; and their child, Elizabeth’s nephew, Tristan. She was preceded in passing by her father Adrian Del Hierro.

Beth will be remembered for her fierce spirit, her enormous heart, her quick wit, her love of adventure, and the unmistakable energy she brought into every room she entered. She lived boldly, loved deeply, and left an impression that will not fade.
